You will never guess where I got this recipe..... Martha Stewart!
I tore it out of her magazine a few years ago and tucked it in my recipe portfolio. I decided to pull out my portfolio for dinner ideas and when I came across it I thought, Hmmm, I wonder if it is online and sure enough, here it is. The recipe (linked below) is 333 calories per
serving (the recipe serves 4) and it contains 5 grams of fat and 9
grams of fiber.
Initially, I was intrigued because I would never think to make collard greens or black-eyed peas for myself at home since I think of them as "family gathering" food. I would make this for myself for a solo dinner, but I would also make it for friends coming over for dinner. If it were for a New Year's Day meal, I would offer champagne, but I think a nice Chardonnay would be a good year-round choice.
